Quick breads are baked in a loaf shape like bread but use no yeast, hence they are “quick.” But that is a relative term as the bread will take about an hour to bake. However, the preparation is fairly quick, then you can pop it in the oven and go about your business while it bakes. Be sure to let them cool completely, then wrap securely in plastic wrap and they will stay fresh for days. In fact, baking them ahead of time usually improves the flavor. When ready to serve, simply slice thinly. The only one to appear here at this time is Cranberry Nut Bread. However, if you want a Banana Bread, prepare Banana Macadamia Muffins in a loaf pan and bake for 50-60 minutes. Likewise, Coconut Pineapple Muffins can be baked in a loaf as well in the same manner. |
