Banana Macadamia Muffins
Rich and flavorful. Use walnuts if you don't have macadamia nuts, but they won't be the same! Very quick and easy to make.
Mix dry ingredients (flour, soda, nutmeg) together and set aside
Blend butter and sugars well, then beat in the egg.
Add dry ingredients, mashed banana, milk and nuts; stir until well mixed.
Spoon into muffin cups (cups will be almost full).
Top each muffin with a few chopped nuts, using all the remaining nuts.
Bake 25 to 30 minutes at 350°F [175°C] until deep golden brown.
