In this menu are my favorite cookies, organized in the categories Biscotti (twice-baked Italian biscuits), Drop Cookies (so named because they are dropped by spoonfuls onto the baking sheet), and Rolled & Pressed Cookies (those requiring a cookie press, cookie cutters, or manual shaping). 

Also, look under Snack Bars for similar types of snacks. These are the easiest of the lot because you bake them in one go, then cut into individual serving pieces.
