Cucumber Salad

Serves 4

This is a great summertime salad, cool and refreshing. Plus, you make it ahead of time so it is great for a picnic or potluck. This was a salad that often appeared at family meals, but there was never a recipe for it, you just learned how to do it by taste. I’ve tried to quantify the ingredients to my taste, but you can change them to yours.

cucumbers (or 1 Armenian cucumber)

white or unseasoned rice vinegar

water

sugar

salt

 

 

 

 

Peel and thinly slice the cucumbers and onion.
Place in a bowl and pour all other ingredients on top.
Mix well and refrigerate for several hours.

Notes:

The rice vinegar will produce a milder flavor while the white vinegar will be a bit more tangy. Use whichever you prefer or have on hand.
