In this section are a selection of Mexican foods, not all of which are authentic, but have a tasty, south-of-the-border flavor.  The problem with some Mexican food is finding the authentic ingredients.  For example, in Europe, fresh corn tortillas are unavailable (except in Spain - but are difficult to find there).  And without corn tortillas, you cannot make authentic tostadas, tacos or enchiladas.  Flour tortillas are available in many areas in Europe as is salsa, so you can make tostadas, tacos and enchiladas with these.  My cousin Cindy Cartmill is Mexican American and has shared some of her favorite recipes here and I can guarantee they are both delicious and authentic (however, some ingredients may be difficult to find in many areas).
