Sabine's Balinese Salad

Sabine’s Balinese Salad

This is a light and refreshing salad, perfect for those hot summer days. It requires no cooking and little preparation. This salad was inspired from Andreas’ and Sabine’s travels to Bali where she took a cooking course at the hotel. It is perfect to serve with a chicken sate with peanut sauce (although in Bali they would serve a duck sate).

Salad:

cucumber, peeled and chopped into ½” dice

mangos, peeled and chopped into ½” dice

green onion, cut lengthwise then sliced

clove

garlic, minced

Tbs

fresh ginger, grated

shallot, minced

 

 

 

 

Dressing:

rice vinegar

oil

splash

sesame oil

tsp

lime rind, grated

lime juice

tsp

maple syrup (or substitute brown sugar)

 

 

 

 

Mix all the salad ingredients together and toss well.
Mix the dressing in a separate bowl, adjusting ingredients to taste.
Pour dressing over the salad and serve chilled.

Variations:

As neither Jim nor I care for ginger much, I opt to leave it out. We think the salad tastes great that way, but if you are a ginger -lover, be sure to add as much as you like.
