 These are basically fried sliced potatoes (also known as country fries), with a little help from onions and garlic.  Great to serve with eggs and bacon for a hearty American breakfast, or served with wurst and kraut for a German lunch.

potatoes, cooked  (baking or frying-type of potatoes work best)

Use the largest frying pan [sauté pan] possible, as you are trying to get the potatoes only 1 layer thick.  If you need to double or triple the recipe it is better to use several pans.

If you have no cooked potatoes, simply cook 2 whole potatoes in the microwave for about 8 minutes on high, or until done.  Or boil quartered potatoes for 20 minutes and drain well.

Meanwhile, cut the onion into chunks and fry in a little olive oil over medium-high heat.  Add the garlic and blend well. Halve the potatoes lengthwise, then slice into 1/4” [.75 cm] slices.

Place into the pan, moving the onions and garlic aside as much as possible. 
Leave without stirring for several minutes or until the undersides begin to brown, then turn the potatoes over. 
Again, leave for several minutes to brown.  Repeat until most are nicely browned and thoroughly heated through.
