Carnitas means Little Meats.  Carnitas make a wonderful buffet supper dish, or a good taco filling.

lean port (boneless butt)

Ac'cent or meat tenderizer

Salt & pepper to taste

 

 

 

 

Cut the pork into 1" [2.5 cm] cubes, sprinkle with Ac'cent, salt & pepper, and let stand for 1 hour or so.
Place in a shallow baking pan in a 300°F [150°C] oven for about 2 hours, pouring off the fat as it accumulates.
Serve hot.
