Garides Me Feta (Shrimp with Feta)

This is a simple Greek dish, best made with fresh, ripe tomatoes. It is simple and easy, but best of all, it is absolutely delicious. Serve with crusty French bread and a green salad.

raw large shrimp, shelled and deveined

In a heavy skillet, sauté onion in butter and oil until soft.
Add wine, tomatoes, garlic, salt, pepper and oregano.

Bring to boil, lower heat to medium and simmer until sauce is slightly thickened.

Stir in cheese and simmer for 10 to 15 minutes.

Just before serving add shrimp to the hot sauce and cook for 5 minutes or until shrimp are just tender. Do not overcook.

Serve immediately in large bowls with crusty French bread.

Notes:

If fresh ripe tomatoes are not available, use one 28-ounce can of tomatoes (or two 400g cans).
You may also choose to replace the butter and oil with 3 Tbs olive oil.
An equal amount of firm white fish such as hake or halibut works well instead of the shrimp.
For 2 servings, use half recipe with one box (225 g) frozen shrimp.
