Rolled and pressed cookies are those that require you to form them before baking. Cookies like Chocolate Pixies, Mexican Wedding Cakes, and Peanut Butter cookies all require you to roll each cookie into a ball with your hands before baking. Oatmeal Biscuits and Traditional Rolled Christmas Sugar Cookies both require the dough to be rolled thinly with a rolling pin before cutting and baking. And Spritz require a cookie press and a bit of muscle to form them into long ribbons. Make sure you read the entire recipe to understand the equipment you may need to proceed. Also be aware that it will take a bit more time to shape each cookie that to simply drop them onto the baking sheet (but personally, I think it is worth the effort!). |
