Oatmeal Biscuits

These biscuits (what the Irish call cookies) are quite popular in Ireland where I got the recipe. They are nutritious and keep very well in a tin. The biscuits are tasty and crispy, appealing to all ages.  Don't compromise - make them with butter, because the flavor is immeasurably better.

Preheat the oven to 350°F [180°C]
Use a Swiss roll tin, 10” x 15”  [25 cm x 38 cm].

Melt the butter, add the golden syrup and pure vanilla, stir in the sugar and oatmeal and mix well.
Spread into the tin and bake until golden brown and slightly caramelized, about 30 minutes.
Cut into 24-32 squares while still warm.

Note: 

Make half the recipe if a 9” x 13”  [23 cm x 33 cm] pan is used.
