Oatmeal Biscuits
These biscuits (what the Irish call cookies) are quite popular in Ireland where I got the recipe. They are nutritious and keep very well in a tin. The biscuits are tasty and crispy, appealing to all ages. Don't compromise - make them with butter, because the flavor is immeasurably better.
Use a Swiss roll tin, 10” x 15” [25 cm x 38 cm]. Melt the butter, add the golden syrup and pure vanilla, stir in the sugar and oatmeal and mix well. Note:Make half the recipe if a 9” x 13” [23 cm x 33 cm] pan is used. |
