Biscotti

Biscotti are Italian in origin and are a twice-baked, crisp cookie. First, the dough is shaped into a loaf and baked until hard on the outside, but still moist in the center. While warm, they are cut into slices then returned to the oven to dry out. Traditionally, they are meant to be dipped into coffee or other hot beverage.
