Some of my favorite candies are included here.  A few are a bit time consuming, but I find them well worth the effort!  Most of these I only make at Christmastime as special treats, but that needn’t stop you from making them any time of the year. Most of these require the use of a candy thermometer.

Many people avoid making candy because of the time and preciseness required. But once you get used to the fact that this is basic chemistry and that you must follow the instructions exactly, everything will come out fine. This is not the area for cowboys (or cowgirls) to do their own thing unless you are very familiar with what you are doing.

So relax, take your time, follow the instructions precisely, and enjoy!
