MarshmallowMakes 1 pound Marshmallows are easy enough to find in the States, but often difficult to locate in Europe. So here are 2 recipes to make your own. The first one below is easier, but the second one (Marshmallow 2 ) I find to be better, especially with respect to texture. Use marshmallows for making Macadamia Nut Fudge, Chocolate Marshmallow Bars, Almond Joy Cake, on top of your cup of hot chocolate, or simply roast over the campfire.
Mix sugar and ½ cup [125 ml] water and bring to boil. Add softened gelatin and cool to just barely warm. Beat with electric beater about 5 minutes. Use immediately in fudge or other recipes. The remainder can be molded in greased molds and dipped in chocolate. |
