Preheat oven to 400°F [205°C], prepare pans by greasing or lining with paper cups.

Thoroughly combine the apples, sugar, oil, eggs and vanilla.
Combine the flours, baking soda and cinnamon & mix thoroughly into the apple mix.
Spoon batter into pans & bake for 20-25 minutes.
Nice sprinkled with equal parts of brown sugar & spice.
These are lovely moist muffins & hardly need to be buttered.
They will keep will, but are best kept refrigerated & then warmed before eating.
